I am now back and the place just blew me away.
I followed your recommendations on the Ballagio buffet, Maggiano's, the cheesecake factory, and Freemont Street.and Binnions. All were great.
I took in the Grand Canyon by Helicopter, early morning, brilliant.
I managed to get a bit of gambling :-) in and although I didn't break the bank did ok. The highlight was playing a knockout tourney at the Ballagio. Sat at a private table was Doyle Brunson and Scott Seiver along with a few others. They were all of 15 feet away just playing poker. It was a bit of a surreal moment to be so close to these poker gods. I lasted a few hours before getting ko'd. I kept back a Ballagio chip to remember the occasion and went back to the hotel buzzing.
I stopped at the Stratosphere, the highest hotel/casino in Las Vegas. A hotel is located at the top which slowly revolves 360 degrees taking in the views of Las Vegas. The food was to die for and the night time views were something else.
Another highlight was going to the Golden Nugget Casino where they keep the largest Gold Nugget on display, 61llb.
The Ballagio fountains, seeing Elton John at Ceasars Palace, and Wynns were other highlights and I could go on and on. The only thing to say is get yourselves out there and live the dream
